至於我自己这些年来所创作的《饮膳札记》,每篇都是以一道菜的名称为题目,像是「潮州鱼翅」、「清炒虾仁」、「台湾肉粽」、「炒米粉」等,一共写了十九篇文章。所以看起来很像食谱,听说还曾经造成某些书店归类书籍的困扰。

不过我想,如果是为了食谱而买这本书的人,或许会感到失望。因为《饮膳札记》的内容显然跟方才提到的食谱型式有所出入。我的一些朋友看了书以後也对我说:「如果要拿这本书去学做菜,会觉得有点混淆,不够清楚。」好比材料的放法,佐料的多寡。我自己从前总觉得食谱上写佐料「酌量」是不负责的说法,现在倒真正觉得做菜并不能那麽讲究科学的。

我记得一九六九年到一九七○年待在京都进修一年,有个朋友带我去大阪拜访一位日本医生的太太,她很喜欢学中国菜。半路上,我们先去市场买了材料,才到医生家。这个医生家里的厨房漂亮又乾净,尤其是墙壁上还挂了一个小黑板,他们就是要找我去做「炒米粉」的示范。没想到在切菜、放佐料时,这位日本太太十分实事求是地要弄清楚菜的长度、盐的份量;後来我写《饮膳札记》时,才深深体会到中国人做菜真的是很凭感觉的。就好比酱油,不同的品牌咸淡也不同,汤匙也会有大有小,我们又怎麽能要求一种固定的匙量呢?

所以每当朋友质疑我:「像你这种自由心证的食谱,根本是写给会做菜的人看的嘛。」我听了就给朋友一个解释:「我本来就不是在写食谱啊。」

我想,我的《饮膳札记》只是一本用食谱型式去包装的散文。
